CATERING SERVICES MANAGER

RESPONSIBILITIES

• Participate, develop and achieve departmental sales goals in compliance with SMG and Savor…Osceola Heritage Park policies and procedures.  These goals encompass both annual and long-range plans.
• Develop and execute action plans that will guide both routine and special events toward established sales goals. 
• Assist F&B director with developing contacts and networks within the corporate and convention market, associations, and social and civic organizations operating and servicing the Greater Orlando area.
• Develop proposals and food & beverage contracts for potential clients and follow through on pending bookings while up selling catering services when able.
• Develop menus and practice continuous efforts toward menu upgrades and increased services.
• Maintain costing & pricing sheets for all menus and any additional food & beverage services as well and update quarterly
• Be familiar with facility sales and event services policies to ensure team selling concept
• Generate revenue and provide excellent personal service to our internal and external guests.
• Monitor bookings and changes in catering software and coordinates set-up of food & beverage requirements with event services and banquet department.
• Assist clients with menu selection with the aid of the Executive Chef to ensure the menu is within budget and will achieve the goals of our clients and the standards of Savor…Osceola Heritage Park Complex.
• Produce contracts and Banquet Event Order for each event, acquires client signatures on all BEOs and Food & Beverage Policies by their due dates.
• Prepare and distribute banquet event orders to all departments as required, review costing for all food & beverage events.
• Process all banquet event orders, monitor changes, client requests and special needs.
• Ensure a successful client event by routine and thorough checking of food standards, room set up and on-time service with the result of client satisfaction. Resolve any client concerns.
• Prepare and distribute final food and beverage invoice to accounting within 24 hours of event conclusion.
• Entertain prospective clients of the Osceola Heritage Park Complex when necessary as approved by the Director of Food and Beverage.
• Report on a daily basis to the F&B Director information on potential sales leads and existing client relations.
• Notify the F&B Director of any situations that require direct intervention.
• Prepare required reports accurately and submits them on time.
• Update and maintain file information for repeat events with total Food & Beverage revenues and client relations.
• Attend in-house event-related meetings and relays immediate changes with other departments.
• Attend and assist with off-site catering and education programs.
• Maintain an active role in local hospitality community and professional organizations.
• Other duties as assigned that may include occasionally supervising banquets and/or concessions when necessary.

EDUCATION AND EXPERIENCE:

• Minimum of a four-year college degree preferably in Hospitality Management or Business
• Administration and two-four years of hospitality management experience; or an equivalent combination of education and experience. 
• Two years of practical sales experience in hotel or convention center preferred.
• Results-oriented individual with the ability to meet required sales goals.
• Excellent customer service, communication, planning, organizational and inter-personal skills, and ability to multi-task.
• Oral and written communication skills with advanced knowledge of Microsoft Office & Excel.
• ServSafe and TIPS Certification helpful.

ACCOUNTANT (ENTRY LEVEL)

SUMMARY: The Accountant’s primary responsibilities include the following functions in accordance with SMG/OHP policies.

ESSENTIAL DUTIES AND RESPONSIBILITES:

• Create and enter Journal Entries.
• Maintain, reconcile, and analyze general ledger accounts.
• Prepare accounts receivable invoices or post receipts.
• Track deposits made for events.
• Review event estimates or draft invoices prepared by event managers or F&B manager.
• Review revenue reports from outside contractors.
• Review event reports which may include food & beverage cost reports and POS reports.
• Reconcile box office transactions and related bank activity.
• Assist with capital assets and the annual inventory.
• Track assigned asset tags.
• Coordinate proper disposition of assets as needed following established procedures.
• Assist with the preparation of monthly financial statements and supporting schedules.
• Prepare various financial reports and analysis as requested.
• Help ensure proper accounting procedures throughout the facility.  
• Prepare tax reports. 
• Assist with audits.
• Other duties as assigned. 

QUALIFICATIONS:

• Bachelor's Degree (BA) from four-year college or university with a major in accounting;
• Minimum 2 years related experience and/or training is preferred;

COMPUTER SKILLS:                                                

To perform this job successfully, knowledge of Microsoft Excel is essential. Experience with Sage or Peachtree Accounting Software is preferred.

MAINTENANCE/GROUNDSKEEPER

SUMMARY:    Maintains the function and appearance of the facility, oversees the building grounds, and assures facility readiness for a smooth operation of events.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

Performs a variety of grounds maintenance tasks to include edging, mowing, trimming, waste and litter removal, fertilizing, laying sod and raking.  Spreads seed, plants foliage and shrubbery, aerates sports fields, lawns and soils, trims and maintains landscape.  Drags and spikes clay infields (when/where appropriate).
Performs custodial tasks to include emptying and cleaning waste receptacles; washing windows; dusting and polishing furniture; cleaning vents, air filters, fans, walls; changing light bulbs, cleaning restrooms and locker rooms.
Performs physically demanding tasks requiring use of heavy grounds keeping, maintenance and/or custodial equipment.
Performs general maintenance and upkeep of tools, equipment and machinery to include lubricates, services and fuels; performs routine light maintenance and repairs; cleans and maintains safe operation.
Performs minor maintenance and repairs on facilities, structures, equipment, sidewalks, drainage and other County property in one or more of the skilled and semi-skilled disciplines to include plumbing, masonry, carpentry, flooring and irrigation,
Operates lawn care equipment to include manual and riding lawn mowers, sports turf mowers, sand pros and tractors, sod cutters, trucks, weed-eaters, trimmers, edger and blower.
Operates and maintains irrigation and drainage systems.
May utilize a wide variety of manual, gas and electric powered hand tools, to include a hammer, shovel, rake, screw drivers, wrenches, digging bar, chainsaw, chemical sprayer leaf blowers, weed eaters, hedge trimmers and edger.
Maintains buildings and equipment by keeping it clean and in a safe working order by emptying and cleaning waste receptacles, cleaning vents, fans and walls; clean equipment and tools after use and maintains cleanliness and order in storage areas.
Painting of facility fields, buildings – both exterior and interior, doors, etc., as needed
Event set-up and changeover to include moving, arranging, assembly and disassembly, setting and removal of items needed;
Participates in work-site safety set-up - preps work areas; sets barricades and cones; conducts traffic control in accordance with uniform work zone safety standards; flag traffic.
Responds to emergency situations in order to confine, resolve or prevent injurious or otherwise hazardous conditions due to fallen debris, spills, broken windows, broken locks, etc.
Organizes and maintains inventory of maintenance supplies and tools.
Reports equipment malfunctions and facility maintenance needs to immediate supervisor.
Performs other duties as assigned or necessary.

QUALIFICATIONS:

Two (2) years’ experience in facility maintenance or an equivalent combination of

Fork Lift Certification or ability to acquire certification within 90 days of hire;
Fluent in English including speaking and writing;
Excellent communication skills and a good working relationships with departmental personnel, supervisors and the general public;

Available Part-Time Positions

USHER/TICKET TAKER (ON-CALL)

SUMMARY: Responsible for directing patrons to their seats for shows or events by performing the following duties. Demonstrates excellent customer service skills; responds promptly to customer needs, responds to requests for service and assistance, able to work independently and handle most questions without assistance. Efficiently and courteously answers questions concerning prices, seating, events, facility layouts and amenities. 

ESSENTIAL DUTIES AND RESPONSIBILITIES:

• Greet each Guest with a smile and encourage them to enjoy their visit to our facilities;
• Listen attentively to Guests' questions, concerns or suggestions and be prepared to answer their questions;
• Inspect your assigned areas for any safety hazards or seating irregularities prior to opening the doors; report any problems to the Event Manager on duty;
• Knowledge of the locations of the nearest restrooms, drinking fountains, telephone, smoking sections and concession stands;
• Face the incoming Guests (not the floor) while standing at the top of your section or in the center of your passageway;
• Constantly scan the seating areas for any unusual happenings;
• Scan your assigned area for cans, bottles, and any alcohol related problems;
• Be alert for any objects being thrown from the seating areas and from areas above your area; 
• Watch for seat jumpers to protect the integrity of the tickets;
• Prevent Guests and vendor from blocking walkways and aisles;
• Advise Guests who are smoking that it is prohibited in the seating areas and direct them to the •designated smoking areas outside;
• Direct and control the exiting of Guests in the event of an emergency evacuation;
• Report any incidents to the Event Manager on Duty;
• Report any medical emergencies to a Manager on Duty; assist in completing an incident report, if necessary;
• Thank Guests for attending the event and conduct a thorough search of your assigned area for any items left behind;
• Turn in all lost and found articles to the Information/Customer Service desk;
• Ability to use and operate Ticket Master Scanner to scan bar code on ticket;
• Require each person entering the facility to have a valid ticket;
• Examine patron’s ticket for valid date, proper facility, show time and seat location;
• Knowledge of reading the ticket text to direct guests to their seats;
• Take tickets at a pace to keep patrons steadily moving into the facility;
• Direct or escort guests with ticket problems to the customer service desk or Event Manager on Duty;
• Other duties and responsibilities may be assigned;

CONCESSIONS STAND MANAGER (ON-CALL)

SUMMARY: Oversee the concession stands and handle operations, issues and situations during an event; control inventory during events.

ESSENTIAL DUTIES AND FUNCTIONS:

• Verify the beginning and ending inventory counts in the concession stands;
• Keeps track of incoming and outgoing inventory;
• Ensure product is stocked and available to guest at all times;
• Help enforce all SMG policies and procedures including alcohol policies;
• Ensure that all paperwork is filled out properly;
• Provide excellent customer service skills;
• Assist with training new concession workers;

SUMMARY: Sell menu items at the concession stand, control waste and provide good customer satisfaction.

• Assist with break down and cleanup of catered event;
• Maintain all Banquet equipment cleanliness;
• Hands-on with all aspects of the Banquet Server duties;

• Experience in the food service industry;
• One plus years of wait staff experience;
