COOK I

Summary: The Cook I will work in the main kitchen, catering and concessions, preparing food items for the facility and lead the Culinary Operations including off premises locations.

 

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Work with leadership and execute/maintain the required production;
  • Ensure the cleanliness and organization of the entire Culinary Operation

CATERING SUPERVISOR     

FLSA Status: Salary Exempt                                         

Department: Food & Beverage                          

Reports to: F&B Operations Manager

 

SUMMARY:  The Catering Supervisor will work in conjunction with the Banquet Manager and Catering Sales Manager in both Banquet and Arena Functions within the Catering Department to include, but not limited to, Suite Attendant, Banquets, Meetings, Bars and any other function serving any food and beverage items.

 

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Assist with the training of new employees.
  • Schedule the appropriate staff for events, oversee and direct staff.
  • Assist with enforcing SMG/OHP policies and procedures including alcohol policies.
  • Serve as liaison with clients.
  • Fulfill the service per each Banquet Event Order (BEO).
  • Prep set up and organization of Catered Event; Prep break down and cleanup of Catered Event.
  • Creativity in designing buffet presentations and coffee break décor.
  • Continuously improve the overall look and appearance of buffets.
  • Maintain a line of communication with the Banquet Manager.
  • Manage banquets in the absence of Banquet Manager/F&B Operations Manager.
  • Assist Banquet Manager with maintaining accurate cogs and labor for an event.
  • Follow and maintain all cost guidelines for labor, beverage & food.
  • Maintain all Banquet equipment cleanliness on a daily basis.
  • Attend Weekly F&B Department Meetings and Menu Meetings.
  • Other duties as assigned.

 

EDUCATION AND EXPERIENCE

  • High school diploma or GED required;
  • 1 to 2 years’ experience supervising other employees in the food service industry.
  • ServSafe and TIPS Certification or ability to obtain within 90 days of employment.
  • Fluent in English and Spanish preferred.

CHIEF ENGINEER

FLSA Status: Hourly, Non-Exempt                                         

Department: Operations                          

Reports to: Director of Operations

 

SUMMARY:   This position is responsible for maintaining full operation of technical and mechanical systems (electrical, telecommunications, audio/visual equipment, food and beverage equipment, and service vehicles) within the Silver Spurs Arena, Events Center, baseball stadium, and property.  Ensure that the delivery of event-related utility services are set up in a timely manner and maintained during events.  Work closely with the county facility maintenance team in maintaining physical plant systems and operations (HVAC, facility maintenance, roofing systems, plumbing, backup power systems, and fire systems). 

 

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Ensures proper utilization of CMMS program (Altum) and monitors assigned work orders;
  • Coordinate, monitor and supervise general maintenance of facility;
  • Provides technical support, oversee and/or make repairs to all facility systems and equipment;
  • Coordinate preventive maintenance activities and maintain proper documents/logs for record keeping;
  • Develop an emergency action plan, corrective action plan and solutions for system malfunctions

or breakdowns; maintain capital equipment inventory. 

  • Ensures adherence to OSHA, NFPA and other applicable safety codes;
  • Ensure that events are prepared and equipped with proper technical equipment and systems;
  • Maintain a safe working environment;
  • Conforms to the policies established by SMG in the successful performance of this position;
  • Other duties may be assigned;

 

SUPERVISORY RESPONSIBILITIES:    

  • Directly supervises employees in the Engineering Department in accordance with SMG's policies and applicable laws;
  • Plan, assign and direct work;
  • Address complaints with the Director of Operations;
  • Assist with the interview process and training of engineers;

 

EDUCATION AND/OR EXPERIENCE:

  • High school diploma or GED required;
  • Graduate of an accredited technical school preferred but not required;
  • Three plus years of hands-on experience in building maintenance or related field;
  • Two plus years in a supervisory role;

The Ticket Seller will be responsible for ticket sales for shows or events by performing the following duties.

  • Sells tickets using Ticketmaster software.
  • Provides exceptional customer service while processing ticket orders and/or solving ticket related issues.
  • Efficiently and courteously answers questions regarding seating, pricing, policies, and event details.

  • Dispenses tickets requested by patrons; accepts payment and makes changes accurately.

DISHWASHER / STEWARD (Part-Time)

The Dishwasher/Steward will work in the kitchen ensuring that a high standard of cleanliness and sanitation is maintained within the food and beverage department.

 

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Stage plates and setup breakdown area prior to events.
  • Assist FOH prior to events as needed.
  • Scrapes food from dirty dishes and washes them by hand or places them in racks or on conveyor to dishwashing machine.
  • Washes pots, pans, trays, worktables, walls, ranges and refrigerators.
  • Maintains clean dry floors and walls at all times, including sweeping and mopping.
  • Segregates and removes trash and garbage and places it in designated containers.
  • Steam cleans or hoses out garbage cans.
  • Transfers supplies and equipment between storage and work areas.
  • Help keep all China, Glass, and Silver in place, along with keeping the Banquet storage areas stocked and orderly.
  • Assist in plating up for events.
  • Maintains sanitary and safe work environment at all times.
  • Other duties as assigned.

  • Ability to follow directions given by the Sous Chef and Executive Sous Chef.
